One Cru: Fins Bois

We are proud to be implanted in the FINS BOIS Cru and we never miss an opportunity to say it. We must not forget that this is the biggest “cru” of our region: it flows in the veins of many bottles of cognac! Our estate is located near Jarnac and benefits from the limestone lands of Champagne and the clay-limestone lands and “groies” of the Fins Bois area. This diversity brings to our eaux-de-vie a beautiful aromatic complexity.

Treating the Soil with Respect and Vines Culture

We respect the soil by cultivating our vineyards without chemicals or pesticides. Clover and field beans grow in our vineyards and help with the regeneration of soils. The management of vines rests on the types of soil and plots. The goal is to obtain healthy grapes of the best possible quality. We also cultivate diversity. The estate consists of 3 white wine varieties: Ugni Blanc, the majority grape variety, Colombard and Folle Blanche.

Distillation

It is a technique specific to our house, which I got from my father that he himself got from his mother. It emphasizes the roundness of the eaux-de-vie and fosters our cru’s aroma intensity. We distill in 2 copper stills of 16hl and 20hl to emphasize the aromatic complexity that we cherish so much.

Careful Aging and Monitoring

Fanny passionately takes care of aging our spirits. She takes her time and lets this magical step take place. She carefully selects her barrels, according to wood grain, “chauffes” (distillations) and capacities. She relies on diversity to achieve complexity. The tannin potential of oak wood are as rich and varied as the organoleptic characteristics of the grape varieties we use.

The Subtle Art of Blending

This complex process involves all our senses, as the aim is to get a balanced, round, aromatic cognac and, above all, one that is enjoyable to taste! Francis, Fanny’s father, is always on hand to participate in tasting. It’s important for me to share, to listen. We are having so much fun making this cognac! Sharing is half the work.

Bottling

Like all the stages of elaboration of this cognac, bottling is also carried out on the property. It is handmade, like in the old days. We pay special attention to the packaging of our bottles.
